Day One
so I've decided to do a photo a day for the month of July just as a little challenge
and to possibly feel a little more creative and productive
I sit so long at this chair, hating being chained to it
and my words aren't coming, in fact I am advancing at a very slow snails pace.

these days
I survived a week of uni (YAY), there are times that I really feel exhausted by it all and this week was definitely one of those times but luckily I am still alive. I even got to do a little baking yesterday despite the horribly hot weather and today I actually left the house which was incredible despite the hot weather (again).
The first pic is of my flea market find Sunday...another one of my much cherished activities lately. Makes me feel a little more human ;)

things
Sorry I've been away for so long, it has truly felt like an eternity. Maybe because I've hardly had my camera in my hands or because so much has been going on, but life has been crazy as usual. My internet has been down for the past two weeks, when it finally came on it lasted a short while before it died again THEN our little van died, Andres tried repairing it but then it died a few days later...it wasn't a good week AND to top that week off someone hacked my website and I lost my posts. Thankfully all is well again.
I wish I had taken a few more photos, but sadly this is it:

new home

Sometimes
Sometimes after sitting all day at my desk my legs and back start aching, so I get up and stretch a bit, but when stretching I get the urge to take photos, or look at my plants and flowers in my garden...but most of the time I get the urge to bake a cake. I am sure once this semester is over and done with I will be missing the computer and bored with baking (well, here's hoping right?).
PS. look how much my succulent has grown! He wasn't enjoying life indoors and was looking so sickly but now he is at the front and completely ignored and he is thriving, go figure!

life lately
I know I should be spending all my spare time finishing up assignments (just two left) but it seems that during my last weeks at uni I always lack the energy to finish up strong and get distracted by EVERYTHING!
So this is what I have been up to lately...a little baking, a little op shop purchases, a little mail making, a little crocheting. If only all my days could be spent like that ;)

long days
Today was an extremely busy kind of day, I did a little bit of baking...two whole wheat bread loaves one for us and one for my husband as he will be travelling for the next three days. And I baked my youngest boy his birthday caramel mud cake. It didn't turn out quite like I had pictured but looks are definitely not important around these parts and it certainly didn't bother the birthday boy, although he did complain about it not having a candle. My 12 year old is plenty demanding!
I am ready for bed...I am so exhausted and I am not too sure why. It is only 7pm! but fingers crossed I DO NOT scare myself too much these next few nights and can get a bit of sleep.

my week in pictures
I can't believe how quickly this week has gone...the cinnamon roll cake was made exactly a week ago and I was going to upload the photo with the recipe but time got the better of me...as usual. Oh my does time go swiftly!
These are just a few photos I managed to snap, including one of my teenager upset with his mama.
On to the recipe...(requested by Laura) this is definitely one that your tummy will love
Cinnamon Roll Cake
Cake
3 cups self-raising flour
1/4 teaspoon salt
1 cup sugar
1 1/2 cups milk
2 eggs
2 teaspoons vanilla
113g unsalted butter, melted
Topping
226g unsalted butter, softened
1 cup brown sugar
2 tablespoons flour
1 tablespoon cinnamon
Glaze
2 cups icing sugar
5 tablespoons milk
1 teaspoon vanilla
Preparation:
Preheat oven to 180C.
Mix the flour, salt, sugar, milk, eggs and vanilla. Once combined, slowly stir in the 1/2 cup melted butter. Pour batter into a greased baking pan.
In a large bowl, mix the 226g of softened butter, brown sugar, flour, and cinnamon until well combined. Drop evenly over cake batter by the tablespoonfuls and use a knife to marble through the cake.
Bake at 180C for 25-30 minutes or until skewer comes out nearly clean when inserted in centre of cake.
For the glaze mix icing sugar, milk and vanilla in a large bowl. Whisk until smooth and drizzle over warm cake. Serve warm or at room temperature.
